Look beyond the percentage
The cocoa percentage is a useful starting point, but it is not a flavor score. Two bars with the same percentage can taste very different. Read the maker’s tasting notes as suggestions, then see what you notice yourself.
Try a simple side-by-side tasting
Choose one milk chocolate, one darker bar, and one bar with an inclusion such as nuts or caramel. Break off a small piece of each. Take your time and have plain water between bites.
Pay attention to texture
Notice how the chocolate breaks and how it melts. Some bars feel creamy, while others have a more pronounced texture. Neither experience needs to be the right one; your preference is the point.
Keep your discoveries
Save a wrapper or a note with the bar’s name and what you liked. Next time, choose one favorite and one unfamiliar bar. That small habit makes a chocolate collection more personal and much more fun.
